Britton loves breakfast. He's lucky... cause so do I. Omelets, pancakes, waffles, even a juicy grapefruit and fruit smoothie. You name it, we typically have it for breakfast. I'll admit that I've somewhat mastered the art of the omelet. I love variety, color and flavor in my omelets... here's how it's done:
organic baby spinach
omega 3 (cage free) eggs
sharp cheddar cheese
sweet cherry tomatoes
ham or bacon or turkey (whatever is on hand)
organic sweet yellow onion
green, red or yellow pepper
pepper and salt (to taste)
These ingredients change from time to time... I like to explore based on what's in my fridge. But omelets this morning were YUMMY.
The secret is to sautee the onions and peppers in OLIVE OIL and fresh ground pepper before adding the eggs. I typically do 2 eggs and beat them good before adding to the pan.
